The Story
Le Rocher is a sugar cane juice distillate made with inspiration from the Jamaican style of Rum where they use "Dunder" to jumpstart fermentation. Dunder is made from the leftovers from previous distillates and is stored separately to develop yeasts and microbes and is later used in small quantities when a new batch of sugar cane juice is ready to start fermenting.
