Daftmill is a seasonal farm distillery located in Fife, Lowlands. This 2010 Summer Batch was produced using Optic barley grown on-site in the farm’s south fields. Because the distillery only operates during the farm’s quiet periods, production remains significantly smaller than traditional commercial operations. This specific release was vatted from 25 first-fill bourbon barrels sourced from Clermont Springs, Kentucky. It represents a notable era for the distillery, as it is the final production season to utilize the Optic barley strain, which is favored for its oily, weightier texture despite being less efficient to grow than modern varieties.
Tasting Notes On the nose, lemon zest, vanilla custard, and poached pear. The palate shows honeyed cereal, orange marmalade, and hazelnut. The finish is medium in length with dried herbs and a mild ginger spice.
