Drapo Dry is a premium vermouth produced in Turin, Piedmont. As an authentic Vermouth di Torino, it is made using a base of high-quality Italian white wine fortified and infused with a selection of aromatic herbs and botanicals. This dry expression is characterized by a significantly lower sugar content than the Bianco or Rosso versions, focusing instead on a crisp, vinous profile that highlights the quality of the base wine and the clarity of the botanicals.
The production process centers on artemisia, which provides the foundational bitterness, alongside a blend of bright citrus and floral elements. This style is specifically designed for classic cocktail applications, particularly the Martini, where its clean acidity and lack of residual sugar allow the gin or vodka to remain the focus while providing a structured, herbal backbone.
Tasting Notes The nose presents aromas of wild flowers, chamomile, and fresh lemon peel. On the palate, it is crisp and bone-dry with notes of green apple, coriander, and white pepper. The finish is short and clean with a lingering salinity and a hint of bitter almond.
